It seems like a lot of people seem to think that this is an "ESH" (Everybody Sucks Here) and I agree that this would be the case IF her roommate hadn't told her to prove that she was the thief.
At that point, all bets are off and I think the cameras are absolutely justified. Had she put the cameras up before that interaction with Kate then I would say that ESH. Since she didn't do it until afterward I would say that the OP is NTA (Not the A-Hole) in this situation.

Multiply that my every evening of the summer or every night of the year and you have manifested torture.
